SALTY RECIPE

Chicken in Orange Tarandacuao Style
It is a fish broth cooked in water, very substantial, because in addition to xoconostle, it contains guajillo chile, epazote, vegetables, bay leaf and any type of fish. It is a complete meal that can be eaten as a first course. It is called “largo” because of the amount of time it takes to cook.
Ingredients:
- 1 catfish of good size.
- 5 guajillo chiles split lengthwise.
- 5 leaf tomatoes peeled and chopped.
- 4 xoconostles peeled and halved.
- 2 sprigs of chopped cilantro.
- 1 to 2 potatoes, peeled and chopped.
- 1 slice of cabbage.
- 1 sliced onion.
- 1 chopped tomato.
- chopped garlic.
- salt to taste.
Directions:
Boil all the vegetables in a liter and a half of water. Add the chiles and cilantro. Once everything is cooked, add the fish to boil together with the vegetables for 10 to 12 minutes. Add salt and serve hot.
