In Jalpa de Cánovas, Magical Town of Guanajuato, the gastronomic calendar marks a special date every summer: the quince season. Between July and August, the orchards are filled with this golden fruit that, with patience and expert hands, is transformed into the famous quince paste, culinary emblem of the region.

Although this corner of Purísima del Rincón boasts a great variety of handmade sweets -such as guava rolls with cajeta, crystallized pumpkins and sweet potatoes, cocadas or candied nuts-, it is the quince paste that has conquered generations. The recipe, passed down from family to family, has stood the test of time and continues to be made with the same artisanal touch that gives it its unique flavor.

During the season, mainly at the end of August and extending until November or even February, the entrances to the Magical Town are filled with small family stands that display not only the traditional ate, but also innovations that surprise locals and visitors: versions with chamoy, with walnuts and even sugar-free options, designed for those who seek to take care of their health without giving up tradition.

Quince paste in Jalpa is not only a dessert; it is a versatile ingredient that is enjoyed in many ways: accompanied with cheese, as a filling for typical breads or combined with the famous snow of Don Toño, a classic that every visitor must try.

This sweet tradition even has its own celebration: the Nut and Quince Fair, held at the end of August, in the Main Square where it will be filled with live music, workshops, activities for the whole family and, of course, an irresistible gastronomic display where the nut and quince will be the protagonists.

If you visit Jalpa de Cánovas this season, get ready for a journey of flavors that combines history, creativity and the pride of a community that keeps its culinary heritage alive. Because in this Pueblo Magico, every bite of quince paste is, literally, a little piece of tradition.
