Garambullo flower pancakes with shrimp

This recipe is a variation of the classic tortita capeada de nopales con camarón, but instead uses garambullo flower. The fruit of the garambullo -the red Granjeno-, is extracted from one of the many varieties of cacti common to the arid zone of northwestern Guanajuato. In the San José de Iturbide market, for example, it is common to see the garambullo fruit as an ingredient in the culinary preparations of housewives.


Ingredients:
  • garambullo flower
  • shrimp powder
  • 2 eggs
  • 3 guajillo chiles
  • 1 clove garlic
  • 1⁄2 onion
  • 1⁄2 tsp. cumin
  • 1 pinch of ground pepper
  • 1 nail
  • 1⁄2 tsp. paprika
  • oil
  • salt

Directions:

Wash the flowers and boil them in water. When they are well cooked, strain and drain well. Beat the egg whites until stiff. Add the flowers and the shrimp powder and stir in an enveloping way. In a frying pan, heat the oil and when it is very hot, with the help of a spoon, take a little of the preparation and place it in the oil; when they are cooked on one side, turn them so that they are golden on both sides. Separately, prepare a broth with the previously soaked and ground guajillo chiles; let it boil and add the rest of the ingredients. Add the pancakes and let them boil for another five minutes.
