SALTY RECIPE

Uchepos jaralenses
Uchepo is the Purépecha name for tamales. There are a variety of recipes, sweet or otherwise, for this rather small tamale, reminiscent of corn tamales. The uchepos de leche prepared with tender corn is a traditional snack from the south of the state. In this version the recipe replaces the sweet flavor of the tender corn and milk with fresh milk cream.
Ingredients:
- 1 1 1⁄2 kg of mass
- 1⁄2 liter of oil.
- 1⁄2 kg cheese
- 1 cup fresh milk cream
- 5 tablespoons baking powder
- 5 teaspoons salt
- 50 pieces of corn husks
Directions:
Mix the crumbled cheese, baking powder, cream and salt; knead a little and at the end add the preheated oil. Continue kneading until smooth and fluffy. The dough is spread on the corn husks, wrap them perfectly well forming the corundas; they are baked for about one hour. Serve with chili sauce and cheese.
