Cajeta de Celaya Almendrada
Cajeta takes its name from the small round or oval wooden box in which sweet pastes are kept. It is a goat's milk sweet that has its origin in the city of Celaya and, in fact, it is known almost everywhere in the country by that generic name. It can be prepared in almost any flavor, but the principle is always the same: milk prepared with sugar, baking soda and cornstarch.
- 2 cans of condensed milk
- 75 g toasted almonds
- 1⁄4 liter of water.
- 1 teaspoon of baking soda
- 1 teaspoon cornstarch
- 1 fig leaf
Directions:
In a fairly large container, boil the fig leaf in water for a few minutes; then remove it and add the condensed milk, cornstarch and baking soda; let it boil, stirring constantly, until it becomes thick cream; then remove it from the heat and add the toasted and ground almonds; stir well for the last time and transfer it to its containers, which can be small boxes or previously sterilized glass containers.
