We are registered as a non-profit organization constituted in 1989 as Comunidad Agropecuaria Industrial EAS, AC, beginning operations on July 5, 1992.
Kibbutz EAS was founded by Father Antonio Hortelano (+), a Catholic priest of the Redemptorist Missionaries congregation, who was inspired by the Israeli kibbutz model for community and sustainable work, adding Catholic Christian spirituality with an ecumenical attitude and the option for the development of people as the central axis of the project.

Tuesday to Sunday from 10 a.m. to 5:30 p.m. (last tour leaves at 4 p.m.) at the CAV's in the archaeological zone, two official Volkswagen Crafter 22-seater vehicles transfer, leaving every hour mentioned above, which takes them to the Archaeological Zone 8 kilometers away where they will walk 1.1 km, the tour takes 2.5 hours.
During your visit, you cannot miss the three main architectural complexes that have been restored and are accessible to the public:
House of the Thirteen Heavens (Complex “A”): Ascending with its impressive 16-meter pyramid, this space was a key point for astronomical observation and trade. In its courtyard, which was filled with water during the rainy season, the sky was reflected, creating a magical connection between the earthly and celestial worlds. Here, you can also admire the majestic Red Temple, the largest in Mesoamerica, adorned with murals of profound meanings.
House of the Longest Night (Complex “B”): With a design that reflects its connection to the winter solstice, this complex includes a water conveyance system and rooms with hearths, revealing the daily life of its ancient inhabitants. The history of significant burials, such as “La Niña de Lluvia”, adds a touch of mystery and depth to the site.
Casa del Viento (Complex “D”): This circular structure, with its three construction stages, offers a unique view that simulates a toril. Its design and the temple on top invite visitors to reflect on the rituals and beliefs of those who inhabited this sacred place.
Cañada de la Virgen is not only an archaeological site; it is a journey through time, where the echoes of ceremonies and rituals still resound. The rich biodiversity of its surroundings and the presence of commercial materials such as obsidian and turquoise make this destination a key point in the commercial routes of Mesoamerica.

How to get there:
From San Miguel de Allende, take the highway that goes to Celaya until the junction with highway 51 to continue in the direction of Guanajuato. After passing by the Ignacio Allende dam and later through the community of Agustin Gonzalez, a few minutes later you will find the access to the archaeological zone indicated (kilometer 10+800 of highway 51).
From Guanajuato, take highway 110 towards Juventino Rosas until the junction with highway 51 (at Don Sebastián) to continue towards San Miguel de Allende. Continue on highway 51 until you reach kilometer 10+800, where the access to the archeological zone is indicated.
Its urban layout reflects the cosmic cycles to which the lives of groups of farmers, who also practiced gathering and hunting, were linked.
Fox Center
- Velaria:
La Velaria is one of the most emblematic spaces of the Fox Center, with a capacity to host between 4,000 and 10,000 people. With a size of 5,800 m², this venue has had the honor of hosting great personalities of the world. The Velaria includes services such as cleaning before, during and after the event, parking and institutional security. It is important to note that the capacity of the space may vary depending on the type of event to be held.
- Esplanade/Arcade:
The Esplanade and Arquería are part of the rich history of Hacienda San Cristóbal. This space can accommodate up to 3,575 people in auditorium format and 3,000 people for banquets. Access to power, Wi-Fi, audio and projection equipment is available, making this venue a versatile option for large-scale events.
- Patio Don Vicente:
The Patio Don Vicente is a beautiful outdoor space surrounded by planters, ideal for more intimate events. With capacity for 300 people in auditorium format and 200 people for banquets, this patio is not only functional, but also possesses a historical value that adds a sense of emotional connection to each event. The courtyard is perfect for welcoming guests in a relaxed atmosphere.
- Redondel: Recreational Space
The Redondel is a charming circular space that complements the events held in the Velaria. It serves as a reception area where employees can enjoy food and socialize in a quiet environment. With capacity for more than 300 people, the Redondel combines design and nature, providing a perfect environment for relaxation.
- Auditorium: Modernity and Versatility
Finally, the Auditorium is a modern cube-shaped space designed to offer all the necessary amenities for events. With capacity for 500 people in the auditorium and 200 people at the banquet, it has Wi-Fi, electric power, air conditioning, audio and projection equipment, which ensures that each event runs smoothly.

Penca y Piedra Mezcal
This Mezcal is handcrafted in Vergel de la Sierra. This process allows to have the smoky and harmonious note. These agaves come from the many communities of San Felipe.
Mezcal Penca y Piedra, Cenizo, handcrafted in the municipality of San Felipe Torres Mochas, Guanajuato, won a Gold medal at the “VII Concurso Nacional de Marcas de Mezcal y Destilados Mexicanos 2018” of the Academia del Mezcal y del Maguey A.C., in Mexico City.
In addition to harvesting the agaves, at Penca y Piedra the farmers are taught the correct way to harvest the agave, with the objective of offering them the opportunity to sell their agave to more mezcal producers in the area.
Penca y Piedra has been recognized as one of the 33 best mezcals in Mexico by Cava Magazine's Oaxaca Mezcal Competition, in which nearly 150 mezcals participated.

Torres Mochas Mezcal
Mezcal Torres Mochas, from San Felipe, is composed of members who are maguey and mezcal producers in San Felipe and belong to rural communities such as: Emiliano Zapata, El Carretón, Fábrica de Melchor, Cuartos, and San Andrés del Cubo.
The preparation of mezcal begins with the planting of the maguey Salmiana flower in the field. The agave receives certain care until it reaches maturity.
When the plant is ready, the leaves are cut off and it is transferred to the stone and earth ovens.
Once the pineapples are cooked, they are manually milled to obtain a sugary juice, which is fermented for seven days in wooden vats to produce the must.
Once the must is fermented, the product is passed to the distillation and rectification process in copper and wood stills, which is where the flavor of mezcal is generated.

Jaral de Berrio Mezcal
This Jaral de Berrio mezcal has its roots in Hacienda Jaral de Berrio, one of the most important and oldest properties in Mexico, located in the municipality of San Felipe, Guanajuato.
The hacienda dates back to the 18th century and was one of the largest and richest in the country, belonging to the family of the Marquises of Jaral de Berrio.
The Jaral de Berrio mezcal production process follows traditional methods that have been preserved over the years. This process includes:
- Agave selection: Local agave varieties are used, mainly the Salmiana agave, known for its distinctive flavor.
- Cooking: Agave pineapples are cooked in stone or clay ovens, using firewood to provide the necessary heat.
- Grinding: The cooked pineapples are crushed to extract the fermentable juices.
- Fermentation: Agave juice is fermented in wooden vats with natural yeasts, a process that can take several days.
- Distillation: The fermented liquid is distilled in copper stills to obtain mezcal. In some cases, a double distillation is performed to refine the product.
- Aging: Some Jaral de Berrio mezcals are aged in oak barrels to develop more complex flavors.
- Jaral de Berrio mezcal is known for its unique characteristics:
- Aroma: Herbal and fruity aromas with smoky notes resulting from the cooking process of the agave pineapples.
- Taste: In the mouth, mezcal offers a balance between sweet and bitter flavors, with hints of cooked agave, earth and smoke.
- Varieties: In addition to the young versions (white or silver), there are reposado and añejo varieties that have been aged in wooden barrels, providing richer and more complex flavors.
Jaral de Berrio's mezcal has been recognized both nationally and internationally for its quality and authenticity. It is appreciated by mezcal connoisseurs and lovers of artisanal beverages.
