Guanajuato's gastronomy continues to solidify its position nationally and internationally thanks to the identity held within its flavors.
Sabor es Polanco is one of the premier showcases for traditional and contemporary Latin American cuisine.
Guanajuato's gastronomy will have a prominent national and international presence by participating as the Guest State in the 2026 edition of the Sabor es Polanco festival, considered the most important gourmet event in Latin America. The event will take place from March 13 to 15, 2026, at the iconic Campo Marte venue in Mexico City.
Guanajuato's presence is spearheaded by the Secretariat of Tourism and Identity of the Government of the People (SECTURI) and a strategic vision from Governor Libia Dennise with the objective of strengthening the state's positioning as a high-level gastronomic destination, highlighting its traditional cuisine, its contemporary culinary evolution, and the growth of its wine and spirits industry.
An international gastronomic festival
Since its creation over a decade ago, Sabor es Polanco has established itself as one of the most relevant gastronomic events in Mexico and Latin America. Throughout more than twelve editions, the festival has brought together renowned chefs, high-end restaurants, gourmet producers, and food lovers in a space where flavors, culinary experiences, and innovative proposals converge.
The event has registered sustained growth in attendance, reaching over 12,000 visitors per edition, with sold-out tickets in recent years. Its audience of culinary experts and critics, winemakers, and lovers of traditional and contemporary cuisine makes it a strategic showcase for tourist destinations and premium gastronomic products.
The 2026 edition will feature the participation of more than 85 high-end restaurants from the country's capital and various regions of Mexico, in addition to unlimited tastings of wines, beers, spirits, and gourmet products, specialized tastings, immersive experiences, live music, and networking spaces among leaders of the gastronomic sector.
Guanajuato, a culinary protagonist
Guanajuato's participation as guest state seeks to consolidate its positioning as a national benchmark in gastronomy and wine tourism, highlighting the richness of its traditional cuisine, the talent of its chefs, and the quality of its regional products.
The state will be represented by restaurants and culinary specialists that reflect Guanajuato's gastronomic diversity, from community-rooted cuisine to contemporary offerings.
Among the representatives of traditional cuisine are traditional cooks Dora Isela Castro Andrade, originally from Celaya, who will present a tasting of traditional gorditas; and Elizabeth Jaralillo Cofradías, from Comonfort, who will share the preparation of ceremonial tortillas, traditional dishes, and a workshop on molcajete-made salsas. Their presence represents the living culinary heritage of the Guanajuato communities.
The contemporary proposal will be overseen by Chef Raymundo Gutiérrez, with projects in Dolores Hidalgo and San Miguel de Allende, who will present a cuisine that reinterprets local ingredients using current techniques, showcasing the state's gastronomic evolution.
Wines and spirits from Guanajuato
During the festival, there will be wine tastings from the state's main wine-producing regions, including San Miguel de Allende, Dolores Hidalgo, Comonfort, San Felipe, and León.
Additionally, a wide variety of distilled spirits and artisanal beverages from the state will be presented, including mezcals from San Luis de la Paz, products from the Association of Women Mezcal Producers, as well as iconic labels like Tequila Corralejo and Casa Dragones, in addition to local craft beers.
At the Guanajuato pavilion, there will be experiences offered, including sensory wine tastings, tastings of tequila, artisanal beer, and mezcal with endemic ingredients, as well as traditional gastronomic workshops.
The 2026 edition of Sabor es Polanco will also feature Argentina as the guest country, sharing its space with our State, which expands the international dimension of the festival and the strategic projection for attracting visitors to Guanajuato.
