The elaboration process starts early in the morning, around one o'clock in the morning, so that they are warm and ready for the customers at dawn, since they must be at the perfect temperature.

If there are take-away orders, production increases considerably, especially when customers come from the United States and take up to 3,000 pieces in a single trip.
