In Guanajuato, history and gastronomy are intertwined in every bite, and few recipes demonstrate this as well as enchiladas mineras. Emerging in colonial times, this dish was created by the miners' wives, who sought to prepare nutritious, economical and flavorful meals for the men who worked in the mines. What began as a homemade food, today is one of the culinary symbols of the state.
Local and international recognition
In 2024, Enchiladas Mineras Doña Lupe was recognized as the “Best Traditional Restaurant” in the Best of Guanajuato awards by México Desconocido magazine. And it is not the only applause they receive: the world gastronomic encyclopedia Taste Atlas gave the Enchiladas Mineras a rating of 4.2 stars out of 5, highlighting them as the most representative dish that can be tasted in Guanajuato.
How are the enchiladas mineras?
They are made with corn tortillas dipped in a sauce of guajillo chile, garlic, cumin and oregano, which are then fried to enhance their flavor. Traditionally, they are filled with cheese, onion and a mixture of cooked potato and carrot, accompanied by a piece of chicken. They are served on a bed of lettuce and garnished with jalapeños, grated cheese and a touch of escabeche.
Although the recipe has evolved - originally filled with beans - the heart of this dish remains the same: homemade seasoning and a combination of ingredients that warm the soul.
Where to try them
Although you can find them in many parts of the state, Guanajuato City is one of the best places to enjoy them. Whether in the traditional Mercado Hidalgo, in fondas in the historic center or in renowned restaurants, such as Doña Lupe, enchiladas mineras always offer a direct trip to tradition.
Visiting Guanajuato without tasting them is like leaving without walking its alleys: it is impossible to understand the essence of the place without this experience.
