A drink with pre-Hispanic roots
Lechuguilla water is a fermented beverage that is part of the popular identity of several regions of Mexico. Its origin dates back to pre-Hispanic times and it is especially appreciated in municipalities of Jalisco such as San Gabriel, Tonaya and El Grullo, but it has a strong presence in the city of León, Guanajuato, where it continues to be a symbol of tradition and local flavor.
How it is elaborated
This beverage is obtained from the liquid extracted from the heart of the lechuguilla agave. Water and sugar are added to the juice and then left to ferment for several days, a process that develops its characteristic flavor and slightly effervescent nature.
Flavor and characteristics
Agua de lechuguilla is hydrating, refreshing and alcohol-free, which makes it suitable for everyone. It is distinguished by its fermented and slightly sweet flavor, similar to tepache, and is usually enjoyed very cold to highlight its freshness. Traditionally, it is sold in plastic bags, ready to drink.
A legacy to be preserved
Historically, this drink was consumed as a natural thirst quencher, especially among children after playing or doing outdoor activities. Today, it is kept alive thanks to those who seek to support and rescue this custom, encouraging new generations to know and enjoy this part of the local culture.
