- After receiving the award in 2025, the restaurant led by chef Thierry Ambrosini has once again been nominated for The 100 Must-Visits in Mexico 2026.
Guanajuato's gastronomy continues to gain national recognition, reflecting the quality, creativity, and prestige that distinguish the state's cuisine.
What began as a visit between friends ended up becoming a life project. More than a decade ago, French chef Thierry Ambrosini arrived in Guanajuato to reunite with a friend, without imagining that that visit would mark the beginning of a story that today positions him as one of the city's gastronomic leaders by being one of the “100 Must-Sees of Mexico”.
That dream took shape in 2016 with the opening of “La Table de Andrée,” a restaurant initially located in San Javier and three years later on Pósitos street, in the heart of Guanajuato Capital, from where it has since become consolidated as one of the most recognized French gastronomic experiences in the state.
For Thierry Ambrosini, better known as Andrée, one of the keys to the success of “La Table de Andrée” has been maintaining the essence of an intimate restaurant, where the experience goes beyond the food. He explains that from the very beginning, he sought to create a warm and welcoming space with home-style cooking, where he could interact directly with his guests and share his passion for gastronomy with them.
“Everyone knows me as André because the restaurant is called La Table de Andrée, which means ”Andrea’s Table.’ Andrea is my mom’s name, but I’ve gotten used to being called that,” the chef shared with a laugh.
In 2025, the restaurant was recognized as one of “Mexico’s 100 Must-Visit Places” in the Gastronomy category; and in 2026, it is once again among the nominees, reaffirming the quality of a culinary offering that fuses French tradition with ingredients, flavors, and experiences that have found the perfect setting to evolve in Guanajuato.

Before pursuing a career in gastronomy, Ambrosini built a completely different career path. He studied accounting and earned a master’s degree in economics. However, cooking has always been a part of his life, and he even recalls how he first became interested in cooking.
“My first cooking class was in a summer program when I was six years old. I cooked, participated, and loved it. In my family, we've always liked to cook and eat, although I'm the only one who ended up doing it professionally.
It was at the age of 32 that the Frenchman decided to radically change course and bet everything on his true passion. So he pursued a career in gastronomy to allow himself to travel the world and have different experiences. And: “Interestingly, the trip around the world began in Guanajuato and ended in Guanajuato.

Among his fondest memories is the first dish he ever made as a child: homemade pasta alla Carbonara. It was an experience that eventually became a family story.
“I came home happy, left my plate in the kitchen, and went out with my mom. When I got back, I asked my dad where it was, and he told me he thought it was dog food… so he fed it to the dog; but my dog really liked it,“ she recalled, laughing heartily.
Beyond the accolades, the chef emphasizes that Guanajuato opened doors for him that he would have been unlikely to find anywhere else.
“The great thing about Guanajuato is that it has offered me so many opportunities. I’ve been able to participate in major events like the Cervantino International Festival, where a few years ago I had the honor of hosting the welcome cocktail party when France was the guest of honor. I’ve also collaborated on initiatives such as Guanajuato Sí Sabe, La Noche Porfiriana, and many other events that allowed me to showcase my work.”.
The new nomination in Mexico's Top 100 Unmissables confirms the moment Guanajuato's gastronomy is experiencing, driven by the talent of chefs, producers, traditional cooks, entrepreneurs, and promoters who have turned the state into a national benchmark.

Additionally, Thierry Ambrosini announced that there are plans to develop a new gastronomic project in Guanajuato, an initiative that will contribute to strengthening the culinary offerings of the destination and expanding experiences for visitors and residents.
