Cajeta, a goat's milk caramel from Celaya, Guanajuato, has its roots in the viceroyalty of New Spain. Its creation is attributed to the adaptation of recipes that initially used cow's milk. Cajeta differs from dulce de leche in flavor and texture, being made with goat's milk, sugar and cinnamon in copper pots.
There are several legends about its origin, including an incident in 1807 in a spinning mill and an oversight in the 20th century that led to its discovery. Its name comes from “cajete”, a wooden cylinder in which it was traded.
Named “The Mexican Bicentennial Dessert” in 2010, cajeta symbolizes Mexican tradition and was present during the Mexican Independence, being an important food for the troops. Today, it is exported globally in flavors such as natural, wrapped and burnt, and is presented in its traditional form in wooden boxes.
